The love of family…

Last night, my parents drove down from Northern California for the weekend to stay with my sister and I. The love of family really IS life’s greatest blessing.

But now…BREAKFAST! When I used to live at home during my high school days, my mom would always have home-cooked breakfast prepared for my sister and I right when we woke up. She would often take requests the night before and have it ready on the table so that we could eat and be out the door for school in an instant. Our house was filled with so much love, especially in the kitchen! Since our parents were ‘guests’ in our home now, we had breakfast ready for them.
Heating your thinly sliced apples slices on medium heat allow them to soften and carmelize.
What’s better than warm, hotcakes on Saturday morning?

Cinnamon Apple Oatmeal Pancakes 

  •  1 cup instant, one-minute, old fashioned oats
  • 6 egg whites
  • 1 cup 0% fat greek yogurt (other yogurts would work too)
  • 1/2 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1 tbsp agave nectar, honey, maple syrup or sugar
  • 1/2 tsp baking powder
  • 1/2 apple thinly sliced
  • Put all the ingredients in a blender and puree (except apples)
  • Spray Pam All Natural Cooking Spray (or olive oil) onto a hot pan on medium heat
  • Pour ~1/4 cup of batter onto hot pan
  • Flip over once the batter starts to bubble.
  • Once all the hot cakes are cooked and set aside, grease pan, and carmelize apples (~2-3 each side)
  • Carmelized apple slices
  • PB2 (great for anyone looking for a lower-calorie/fat peanut butter substitute)
  • Cinnamon for garnish
  • TJs honey apple butter
